       <description>The Salad Summit, was an event held to present new research about the health benefits of eating salad and raw vegetables. This event was held to announce a new study from UCLA regarding the nutritional benefits of salad, which has been published in the September issue of the Journal of the American Dietetic Association. Presentations were given by Dr. Lenore Arab of the UCLA School of Public Health and Dr. Asnake Hailu of the Washington State Department of Health. Both presenters addressed their individual studies concerning salad and raw vegetable consumption and the direct correlation they have to improved nutritional status and other health benefits. </description>
