Sweet Corn Jicama Toss

Prep Time: 
20 minutes
  • 1 large jicama, peeled, then julienned
  • 1/2 C. chopped red onion-rinsed under cold water
  • 1 orange, peeled and sliced
  • 2 C. charred sweet grilled corn, thawed from frozen 
  • 4 Tbsp. honey Dijon salad dressing  
  • 2 C. baby spinach
  • 1/4 C. sliced radish
Prep Instructions: 

Combine the jicama, rinsed onion, peeled orange and thawed sweet corn in a bowl.

Toss with honey-Dijon dressing.

Divide the spinach among 4 plates.

Top with 1/4 of the jicama mixture.

Top with radishes and serve.
